Happy Thanksgiving to all who celebrated around the world. Its been a while since my last post and now I’m back with an extremely easy recipe for the cold days.
It’s soup time!!!!! Yeah……
Who doesn’t love soup??? Its a light healthy choice especially if you have lack of time. So this soup is made with butternut squash. Its ideal for you that you have some leftovers from your Thanksgiving menu or you bought one extra butternut squash and now you have no idea what to do with it. For you guys that don’t celebrate Thanksgiving its a chance to buy one butternut squash from the market and add it to you daily diet.
This butternut squash soup contains only 5 ingredients so its cheap to cook , it only take a few mins to get ready for cooking ( you just have to peal the squash and vegetables ) and the most important is that its vegan , gluten free , dairy free and lactose free . The best choice for you that you want a healthy and low fat meal.
Oh and it tastes SOOOOOO GOOD!!!!!!
I used to use milk instead of water to boil the vegetables but i think its more easy and light to cook the soup only in water and broth ( i use vegetable broth but you can use chicken broth too ) plus its dairy and lactose free. You can also add extra vegetables if you like such as ginger to make it a little spicy.
For you who dont want to add any dairy in it you can just avoid to put creme fraise as a topping and just sprinkle it with pure organic extra virgin olive oil ( of course Greek olive oil is THE BEST )
P.S. if you have roasted butternut squash , first you will cook the rest vegetables and then put inside the roasted butternut squash leftovers. DO NOT ADD THEM TO BOILING WATER !!!!

- 1 butternut squash (1 kg) pilled and deseeded
- 2 medium carrots
- 1 medium onion pilled
- 2 garlic cloves pilled
- 3 cups vegetable broth
- 5 cups water
- himalayan salt
- fresh ground pepper
- olive oil
- creme fraise ( optional if you want it dairy and lactose free )
- Cut the butternut squash into squares so it boils easily.
- in a large pot add water and vegetable broth and bring to a boil.
- Add the squash , onions , garlic and carrots and let them boil until vegetables get tender.
- Transfare the soup to a blender and blend it until smooth and creamy
- Serve with olive oil on top and some creme fraise
