Hello my friends!!!!
I’m so excited today cause I’m going to Paris tomorrow to spend the weekend with friends and i can’t wait until I’m getting on the magic airplane. Between packing my suitcases and trying to figure out what I’m going to get with me ( I’m the kind of girl that can’t decide which things – clothes -shoes etc i need to take with me and i end up trying to fit half of my closet in my suitcase ) , i thought it was a good idea to post one my latest inventions. The Beet Cake!!!!!!!! Not only a beet cake, but a chocolate beet cake.
I know who had imagined to put beets into a cake? Well, as more and more people are becoming healthy food addicts ( I’m personally trying to follow all the rules of a healthy diet ) i started working on this recipe . It wasn’t so difficult to me as i love trying new things and new combinations on my recipes. After baking this cake i realised it’s the most delicious chocolate cake you can make with an add of beets.
This beet cake is full of chocolate and it’s totally guilty free to eat. Not only one piece , you can taste two or more pieces of this incredibly delicious vegan beet cake. I forgot to mention that it is a super moist and juicy one. It reminds me of those yummy New York style chocolate cakes that are melting in your mouth.
It’s a smart recipe , your kids can also eat their vegetables in this different way and i promise they won’t realise that the cake they love to eat is full of beets.

- 3 medium boiled beets , cooled
- 1 cup canola or sunflower oil
- ¾ cup brown sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 cups all purpose flour ( you can use gluten free )
- ¾ cup cocoa powder
- 1 tsp baking soda
- ½ tsp salt ( i use himalayan salt )
- For the yogurt topping( optional )
- 4 tsp greek yogurt
- ½ cup powdered sugar
- a few drops of almond extract
- Preheat oven to 350 F ( 180 c )
- Butter a bunt pan and sprinkle it with cocoa powder
- Grate the beets and let them drain into a colander
- In a stand mixer bowl put together the oil and brown sugar until smooth.
- Add one egg at a time and vanilla extract.Give this batter a good mix for 1 min.
- In a mixing bowl put all the dry ingredients together and give a mix. Add them to the wet ingredients and give a mix.
- Add the grated beets into the batter and gently mix with a spatula.
- Fold the batter into the cake pan. Bake for 40 mins. After, remove from the oven and let it cool before removing the cake for 20 mins.
- Enjoy it plain or with the yogurt topping ( optional )
