Hey guys!!! I’m so excited for my first post. I’ve dreamt of this moment long time ago.
I picked a favourite recipe to start my food journey ( as i call it ). So if you want to know me better I should tell you I’m a huge breakfast fan. I love finding out new recipes to start my day. As i prefer gluten free product because i believe they promote better digestion , i chose gluten free pancakes for this first time.
OMG Pancakes!!!! Who doesn’t love pancakes? And whats better than gluten free pancakes? I personally look forward weekends that we have more time to cook different kind of breakfast together with a warm cup of coffee.
This pancake recipe is so easy that you can try it every single day. It take just a few minutes to make them so you can add it to your breakfast every morning before going to work.
Not only these pancakes are gluten free and delicious but they are served with organic Greek yogurt and organic Greek thyme honey from Crete ( my grandmother was born there ). The best thyme honey is produced there ( maybe i have to say a few things about Crete because of its interesting food culture ).
Anyways, lets talk about our pancakes again… This recipe takes about 15mins and you can try it either in the morning or as a healthy snack between your meals or maybe as a desert ( something i usually do as I’m trying not to consume unhealthy stuff when i have sugar cravings )

- 1¼ cups gluten free flour ( i use Doves Farm )
- 1 egg
- 1 cup organic low fat milk ( i prefer 2% fat)
- ½ tsp baking powder
- ½ tsp grounded cinnamon
- 2 tbs low fat organic Greek yogurt
- organic thyme Honey ( i use Greek honey )
- 1 tsp butter ( for the pan )
- Beat the egg until fluffy and then add the milk.
- In a mixing bowl , put together all the dry ingredients and mix them. ( if you don't want your mixture to have lumps then you have to sift the flour first )
- Then add your dry ingredients into the milk and egg and whisk for a few minutes until you have a nice creamy batter. ( If the batter seems to be too thick then add a little more milk )
- Set a skillet on medium heat , and add some butter until its hot.
- Place the batter to the skillet adjusting the size as you prefer.
- Cook about 1 minute until bubbles appear and them flip them. Cook for another minute.
- Serve the pancakes with organic yogurt and Greek thyme honey on top.
