Finally I’m back!!!!Hope you missed me like I did.
Its been quite a long time since my last post. As i told you , i went to Paris for a couple of days ( i have some Paris experience to share with you the next days + food photos ). I was also busy with some job interviews i was invited to. Im currently into job seeking for my not so tasteful profession ( I’m a CPA – Auditor ).
Back to cooking now, this recipe is one of my favourites. Bagels , bagels , bagels …… I just love them. I can eat them every day!!!!
And the story begins somewhere in NY . I had the chance to visit NY not quite as a tourist but i live there for some time and tested every single type of food there. ( That explains the fact that i came back with some extra pounds as a memory ). Im pretty connected to that city because my relatives and some good friends of mine live there. I wish i could spend time with them more often but its not always easy. So the first thing that is coming to my mind is those summer mornings i used to buy a bagel and a coffee for breakfast while heading to the subway. When i came back to Greece i decided to make my very own NY style bagels.
This sweet and fluffy dough makes me want it so much. I can’t resist to a hot poppy seed bagel filled with cream cheese. Yum!!!! These bagels need some more time to get ready and baked but trust my its pretty worthy!!!! After some hours of preparation you will enjoy your very own super delicious bagels.
Besides the time you need to spend , the process is so funny. I love the boiling part. The secret to the bagels recipe is to let the dough rest for some hours so the bagels will turn out fluffy!!
So when you have free time or maybe on Sunday morning you have to try it out. You can have one bagel served with fresh avocado and egg on top ( my favourite choice ) or with the classic cream cheese & even with chocolate spread or peanut butter and jelly!!!!!

- 4 cups flour ( you can use whole wheat flour too )
- 2 tsp dry yeast
- 4 tsp brown sugar
- 4 tbs organic honey
- 1½ cup water
- 1 tbs baking soda
- 2 tsp salt
- 1 egg white
- toppings : poppy seeds , sesame , black sesame , rolled oats
- In a mixing bowl , combine the yeast , water and sugar and let the mixture sit in a warm spot for about 5-10 mins.
- In the stand mixer add your dry ingredients ( flour , salt ) , 2tbs honey and the yeast mixture. Mix in medium-low speed using the pale attachment until the dough comes together.
- Transfer the dough to a floured surface and work it with your hands for about 10 mins until its soft and elastic.
- Let the dough rest for 1h 30mins at a large bowl oiled and covered with a plastic wrap , until doubled in size.
- Cut the dough to even pieces ( this recipe makes 6 normal size bagels ).Shape the dough into a tight ball and make a hole in the center with your thumb and then stretch the centre to make it larger in size.
- Place them on a baking sheet and let them rest for 15 mins to rest coved with a kitchen towel.
- Preheat oven to 430 F (220 C).Fill a large pot with water and bring to a boil. Add the baking soda and the rest 2tbs honey.Add in the bagels (2 at a time ) and cook them for about 30 sec on each side.
- Remove the bagels and put them to the baking sheet. Brush the bagels with the egg white and sprinkle them with toppings.
- Bake them for about 20-25 mins until golden brown.
- Remove from oven and let them cool on a wire rack for 30 mins before serving.
- You can store them until 3 days.
