Hello everyone!! Did you miss me?? I did , so i came back with an amazing greek recipe that you want to try immediately : Greek Stuffed Peppers with Quinoa. OMG YUMMIEEEE!!!
I know I have quite a lot of time to make any posts but this one is a very special recipe which combines my favourite greek recipe with a healthy twist. If you’ve been in Greece for summer holidays or if you just like Greek gastronomy , i guess you have tried the famous Greek recipe called ”Gemista” ( stuffed peppers , tomatoes and other veggies ). Gemista is a very simple recipe that greeks makes it most of the times in summer.Juicy, healthy and bursting with fresh and vibrant colors and flavours. Its a recipe of vegetables such as tomatoes , peppers , zucchini , eggplant that are stuffed with rice , onions and other aromatic herbs baked until soft and browned with fresh greek olive oil.
This traditional Greek recipe for Gemista falls under the category of Greek dishes called “Ladera”, meaning dishes prepared with olive oil. So make sure to use good quality extra virgin olive oil. I love ”Gemista” , my mom makes the best Gemista i’ve ever eaten. So i came up with the idea of transforming the classic greek stuffed vegetables recipe ( my recipe contains only stuffed peppers) to a healthy version of it. As you know i love quinoa. I eat quinoa with almost everything especially when my lunch contains any type of protein i love to serve it with quinoa as a side dish. And as I’m trying to eat more healthy i decided to make this traditional greek recipe ”Gemista” and replace the rice with quinoa.
The filling for these quinoa stuffed peppers also contains small pieces of feta cheese that make this even more delicious and in the same time the recipe has the traditional greek element.If you want to make your dish completely diary free you can skip the feta cheese step but i promise the feta taste is the only thing that matches with the last of those stuffed peppers and lifts the greek tradition and flavour.
Its the most easy recipe to make. You just need one large bowl where you mix all the ingredients for the filling and you have the most tasty vegan and super healthy lunch in just 1 hour.

- 6 medium size peppers
- 1 can diced tomatoes (250 gr)
- 6 tbs quinoa
- ½ cup onion (chopped)
- 1 small clove garlic (chopped)
- ⅓ cup feta cheese ( crumbled )
- 2 tsp tomato paste
- ½ cup olive oil
- ⅓ cup water
- 1 tbs sugar ( i use brown sugar )
- 1 tsp pink himalayan salt
- ¼ cup raisins
- 2 tbs pine seeds
- Preheat oven at 180 C ( 360 F )
- Wash the peppers thoroughly.
- Slice off the top of the peppers and remove the seeds and white parts from the inside. Place the empty vegetables on a large baking tray.
- Prepare the filling. In a large bowl add the rest of the ingredients except the olive oil and the water.
- Mix all the ingredients and add half of the olive oil.
- With a large spoon fill the peppers with the filling until ¾ full.
- Cover the peppers with their lids.
- Sprinkle them with the rest of the olive oil and add the water into the tray.
- Bake them for 1 hour until soft and well browned.
- You may need too add another 1 cup of water.
